Visitors to Wrexham Town Centre had the chance to enjoy a tasty treat this afternoon, with a pop-up stall serving freshly made pancakes on Regent Street.

To celebrate Pancake Day, local chefs Laura Dickenson (Heal the Last Stand) and Chris Ingram (The Glendale Family) spent most of the afternoon serving pancakes from their pop-up stall outside UnDegUn on Regent Street.

Both Laura and Chris have recently set-up a pop-up kitchen, catering for events such as the Celtic festival of Imbolc. However this is their first Pancake Day event.

Pancake making kicked off at midday – with many people seemingly popping by to get some lunch. For £1 customers had the choice of purchasing a savory or sweet pancake, before choosing the topping of their choice (we personally opted for chocolate sauce, with some extra sugar sprinkled on top – just for good measure)

When we popped down to get our pancakes, there was quite a crowd of people waiting to be served – with the pancakes proving so popular, they had all sold out by 3pm!

Over the next few months there are a number of pop-up food events planned, including a special event on March 1st –  where there will be a special lamb dinner for the opening of the ‘Wales in Colour’ exhibition by Mikey Jones at UnDegUn between 4pm-7pm.

Easter weekend will also see the start of ‘Foodie Friday’, which will create a ‘club like restaurant vibe’ to kick start the events during the Easter weekend at UnDegUn.
